Barbecue Steaks with Chimichurri Sauce

Ingredients

  • 6 x 200 g sirloin steaks
  • Salt and pepper
  • Olive oil 100 g
  • 100 g Chimichurri sauce
Chimichurri Sauce
  • 60 g coriander
  • 200 g basil
  • 240 g continental parsley
  • 20 g ground cumin
  • 30 g garlic confit
  • 60 g eschallots
  • 750 ml olive oil
  • Red wine vinegar

Method

  1. To make the chimichurri sauce, place the herbs, cumin, garlic confit, golden shallot and olive oil in a food processor and blend until combined. Add the red wine vinegar just prior to serving.
  2. Season the steaks with salt and pepper and brush with a little olive oil, then grill for about 3 minutes on each side, turning only once. Remove the steak from the grill and cover loosely with foil and rest for a further 10 minutes
  3. Serve the steaks with the chimichurri sauce.
